We aim to transform and transcend the nature of food and traditional dining. L’Alquimia is a place for sharing and exchange, where people come together to discover the unknown. It is a story of symbiosis—between the rustic and the modern—but also centered on sensory experiences and cultural diversity. The alchemy is created using French techniques, blended with Paraguayan and French ingredients. This fusion was born from the alchemy between two people, Mathilde LOSILLA and Horacio ZARATE, the owners of Alquimia.
The story begins just a stone’s throw from the Pont d’Avignon, during their stay in La Mirande.
As avid food lovers and, above all, gourmets, their first ideas began to flow. A unique and authentic concept began to take shape.

Several years passed, and the opportunity to acquire their restaurant arose in March 2019.
Horacio, the head chef, arrived in France 12 years ago with a degree in culinary sociology and a fascination for Paul BOCUSE and Alex ATALA. He took the plunge, working his way through numerous Michelin-starred restaurants in Paris.
Just one was enough, since he went on to work at one Michelin-starred restaurant after another and began his career as a chef.
As for Mathilde, a native of the Rhône Valley who holds a degree and training in the restaurant industry, wine has always been a part of her childhood.
From a very young age, her grandfather used wine to help her develop her sense of smell, with the goal of identifying the wine’s aromas.
This little game became a passion for her: specializing in sommelier work was a natural choice. Today, she takes pleasure in complementing her husband’s cuisine with various menu options through “food and wine” pairings.
